Outside of Italy, the country’s culture and its food appear to be essentially synonymous. And indeed, as The Italian Way makes clear, preparing, cooking, and eating food play a central role in the daily activities of Italians from all walks of life. In this beautifully illustrated book, Douglas Harper and Patrizia Faccioli present a fascinating and colorful look at the Italian table.


Within the volume we find a reference for Home Food - The Cesarinas, and during the presentation will act as a discussant Prof. Egeria Di Nallo, President of our association.

Very common in the Ferrarese territory till the 1980’s, the hare hunting was especially hard but pleasant. As the fresco suggests, dogs were important to make the prey run and tire it out.


Recipe for bean soup
Ingredients for 10 people:

500 g of beans; 6 slices of bread; 1 onion; 230 g of soft lard; a handful of pepper; salt to taste.

Directions:

Cook the beans in water until they are very soft (almost breaking apart). Take the six slices of bread and place them in a saucepan and add cold water until the bread is covered; add a bit of salt. Pass the beans through the food mill until you have nothing left but their skins. Cook the onion in the lard, add the bean pulp, the pepper and the salt. Boil the soup for some minutes and pour over the bread, cook over low heat.

We are already in March, time flies between a traditional dish and another. The days brighten of the spring colors. The recipes take on new contours, those of raw materials of this period. The dishes are different and each place holds its typical secrets. Each Cesarina invites you to sit at her table, choose whom consulting the schedule below.

The Association for the Safeguard and Exploitation of the Traditional Gastronomic-Culinary Wealth of Italy, with its Home Food project sponsored by the Ministry of Agricultural Politics and various Regions of Italy, and in co-operation with the University of Bologna, exploits and spreads the traditional food culture strictly linked to the culture of the typical products and territories.

In this spirit it is possible to become guests of the Italian families and taste foods cooked by the Ladies of the house, real repositories of the old culinary ways and methods.

The Guests (see To become a User Partner), as are the Ladies of the house called Cesarine (see The Cesarine), are members of the Association.

The Cesarine, whose number constantly increases, are available from North to South of Italy (see The Italy of Home Food).  

Since its foundation in April 2004 more than one thousand gastronomic Events have been organized.

The Association for the Safeguard and the Exploitation of the Traditional Gastronomic-Culinary Wealth of Italy has also founded the Home Food Editions, whose mission can be resumed in “good food for good thoughts”. Typical traditional foods become symbol and metaphor of a good way of being together, and this is the main objective for which Home Food was born, with the desire to encourage and promote the development of the “good” at different sense levels.
